Moisture Content: Typically, cloves should have a moisture content of less than 12%. Higher moisture content can lead to mold growth and reduced shelf life.  

Foreign Matter: The presence of foreign matter, such as dirt, stones, or other plant material, should be minimal.  

Color: Cloves should have a deep brown color, indicating proper drying and storage.

Aroma and Flavor: Cloves should have a strong, pungent aroma and a warm, spicy flavor.  

Size and Uniformity: Cloves should be relatively uniform in size, with most buds being fully developed.
